The delicious combination of apples, walnuts, maple and cinnamon is highlighted with hearty oats in this baked casserole that is perfect for dessert or brunch. Serve with a load of pure maple syrup for topping.
Maple Apple Oat Bake
vegan, wheat-free
2 cups rolled oats (recommend: Bob’s Red Mill)
1 cup organic dates, chopped
1 cup walnuts, chopped
1/2 cup pecans, chopped (or additional walnuts)
3 cups apples, chopped
2-3 cups non-dairy milk1/2 cup pure maple syrup (or more to taste)
2 teaspoons cinnamon (or more to taste)
Preheat oven to 350F.
In an 8×8 baking dish, sprinkle a third of the oats. Add half of the dates and nuts. Top with oats, then the apples and then the spices.
Top with half of the non-dairy milk then the remaining dates and nuts. Add the rest of the oats, cinnamon, and then top with the remaining milk. Mixture should be moist but not drowning in milk.
Bake for about 25 minutes, until apples are softened and top is lightly browned.
